{Vanilla Date Coconut} Nice Cream


If you are looking for a quick, amazing taste sensation loaded with healthy benefits, this is certainly a scrumptious solution! Loaded with medium chain fatty acids, the healthy metabolism boosting kind of fats! These fats provide quick energy that stimulates the production of ketones in the liver which then go straight to your brain to support function and prevent cognitive degenerative diseases like Alzheimer's. All coconut fat is especially rich in lauric acid, a fatty acid with especially immune boosting qualities that help fight infections.

In Traditional Chinese Medicine and Ayurveda, chilled foods are discouraged as they are thought to dampen the necessary digestive fire and disrupt digestion when eaten too often. That said, there is a place for some "ice cream" even within these modalities :) And that time is certainly summer!

Kitchen Tools:

1 32 oz Mason Jar, for mixing

1 16 oz Mason Jar, for storing

Immersion Blender

Yield | 8 servings, 1/4 cup each

Ingredients:

  • 1 can (13.5 oz) of full fat Coconut Cream (do NOT shake!)

  • 1/4 cup Raw Coconut Butter

  • 1 1/2 tsp Vanilla extract

  • 1/2 tsp Sea or Pink Salt

  • 4 Medjool Dates, pitted

Instructions:

DO NOT SHAKE THE COCONUT CREAM :) Start by gently pouring the undisturbed coconut cream into your 32 oz mixing jar. Stop when you see the greyish water underneath; you should get about 1 1/4 cups (about 300 milliliters).

Add the rest of ingredients in a 32 oz mason jar. Blend with immersion blender until smooth and creamy. Transfer to the smaller 16 oz mason jar and freeze for about 3 hours or until fully set but still scoopable; after it's fully set up, you can actually keep this in your refrigerator rather than the freezer for more of a soft-serve consistency. If prefer it firmer, keep it in the freezer and take about 30 minutes before serving. Enjoy often! Sprinkle with some Orange Vanilla Spice Granola!
