Overnight Oats | {Papaya, Date & Cinnamon}


The possibilities with overnight oats are endlessly delicious! I heard that you have to start your day with a high protein breakfast (rules!), but I realized that I really love enjoying a little of the sweet taste from fruit in the mornings; it feels nourishing and nurturing and makes me happy heading into my day. So most of my mornings start with some form of oats and 2 hardboiled eggs.

Who doesn't love dates. Dates are intense nuggets of sweetness. So, this recipe only uses 1 date to add that rich sweet flavor as the background note. The cinnamon, vanilla and coconut aminos all enhance the mild sweetness of these overnight oats; but, it's the luo han guo (monkfruit syrup) that really brings it all together. Luo Han Guo is a fruit with sweet pods inside that can be decoccted into a dark, sweet syrup... with no calories and nor strange aftertaste!

I am always dubious of any zero-calorie sweeteners, but there is a difference between artificial and something truly natural. There are a lot of monkfruit sweeteners on the market now, but most are mixed with artificial sweeteners and/or sugar alcohols like erythritol. I order organic monkfruit and make my own. For 20 dollars, I get about 2 liters! So I've listed some of the best options at the bottom of the page.

Kitchen Tools:

1 16 oz Mason jar

Yield | 1 serving

Ingredients:

  • 1/3 cup Organic Rolled Oats

  • 1/2 cup Plain Kefir

  • 1/4 cup Light Coconut Milk, from a can

  • 1 1/2 tbsp Chia Seeds

  • 1 1/2 tbsp Ground Flax Seed

  • 1 Medjool Date, chopped

  • 1 tsp Cinnamon

  • 1 tap Vanilla Extract

  • 1 tsp Coconut Aminos

  • 2 tbsp Luo Han Guo (monkfruit syrup) * see sources below

  • 1 cup Papaya, diced

  • 3 Brazil Nuts, chopped

Instructions:

Add all of the ingredients except the papaya and brazil nuts into you mason jar and mix. Add the chopped papaya and brazil nuts on top. Place the top on the jar and leave on the counter overnight. Wake up and give yourself time to enjoy eating and savoring this delicious start to your day!
